Cashew-Parmesan Fish Fillets

Ingredients

  • 3 Tbsp butter or margarine
  • 1 large egg
  • 34 c grated Romano cheese
  • 2 Tbsp flour
  • 3 Tbsp salad oil
  • 6 fillets 4 oz each
  • 12 c chopped cashews
  • lemon wedges

Directions

  1. Preheat oven to 425
  2. In jelly roll pan or large shallow rimmed baking pan melt butter in oven
  3. Meanwhile in pie plate beat egg slightly
  4. On waxed paper combine cheese and flour
  5. Dip each fillet in egg coat both sides with cheese mixture
  6. Remove pan from oven add 3 tablespoons salad oil to butter
  7. Swirl to blend
  8. Arrange fillets in pan turning to coat with butter mixture
  9. Sprinkle fillets with chopped cashews
  10. Bake on top rack 10 minutes
  11. Garnish fillets with lemon wedges
  12. Makes 6 servings
