Catfish Barbecue
Ingredients
- 13 c red low sodium catsup
- 1 Tbsp lemon juice
- 1 tsp brown sugar
- 2 tsp vegetable oil
- 1 tsp Worcestershire sauce low sodium
- 12 tsp marjoram
- 14 tsp garlic powder
- 14 tsp ground red pepper
- 6 oz farm raised catfish filleted
- vegetable oil as needed
Directions
- Combine first 8 ingredients in a small bowl
- Arrange fillets on sheet pan or sizzle platter that has been coated with cooking spray
- Pour catsup mixture over
- fillets cover and marinate in refrigerator 30 minutes turning once
- Remove fillets from marinade reserving the marinade
- Bring marinade to a boil in a small saucepan for 2 minutes
- Place fillets on rack of broiler pan that has been coated with cooking spray
- Broil 6 inches from heat 10 minutes or until fish flakes easily when tested with a fork basting occasionally with marinade
- Transfer to a serving platter
