Catfish Barbecue

Ingredients

  • 13 c red low sodium catsup
  • 1 Tbsp lemon juice
  • 1 tsp brown sugar
  • 2 tsp vegetable oil
  • 1 tsp Worcestershire sauce low sodium
  • 12 tsp marjoram
  • 14 tsp garlic powder
  • 14 tsp ground red pepper
  • 6 oz farm raised catfish filleted
  • vegetable oil as needed

Directions

  1. Combine first 8 ingredients in a small bowl
  2. Arrange fillets on sheet pan or sizzle platter that has been coated with cooking spray
  3. Pour catsup mixture over
  4. fillets cover and marinate in refrigerator 30 minutes turning once
  5. Remove fillets from marinade reserving the marinade
  6. Bring marinade to a boil in a small saucepan for 2 minutes
  7. Place fillets on rack of broiler pan that has been coated with cooking spray
  8. Broil 6 inches from heat 10 minutes or until fish flakes easily when tested with a fork basting occasionally with marinade
  9. Transfer to a serving platter
