Catfish Gumbo

Catfish Gumbo

Ingredients

  • 1 lb catfish fillets cubed
  • 12 c chopped celery
  • 12 c chopped green pepper
  • 12 c chopped onion
  • 2 medium garlic cloves finely chopped
  • 2 Tbsp vegetable oil
  • 2 c chicken broth
  • 1 14 12 oz can whole tomatoes undrained
  • 1 10 oz pkg frozen sliced okra
  • 14 tsp crushed red pepper
  • 1 tsp gumbo file
  • salt and pepper to taste
  • 1 12 c hot rice

Directions

  1. Cook celery green pepper onion and garlic in vegetable oil in Dutch oven until tender
  2. Add broth tomatoes okra crushed red pepper gumbo file salt and pepper
  3. Cover and simmer 20 minutes Place fish on vegetables
  4. Cover and simmer 15 minutes longer or until fish flakes easily when tested
  5. Serve with hot cooked rice Makes 6 servings
