Catfish Gumbo

Ingredients
- 1 lb catfish fillets cubed
- 12 c chopped celery
- 12 c chopped green pepper
- 12 c chopped onion
- 2 medium garlic cloves finely chopped
- 2 Tbsp vegetable oil
- 2 c chicken broth
- 1 14 12 oz can whole tomatoes undrained
- 1 10 oz pkg frozen sliced okra
- 14 tsp crushed red pepper
- 1 tsp gumbo file
- salt and pepper to taste
- 1 12 c hot rice
Directions
- Cook celery green pepper onion and garlic in vegetable oil in Dutch oven until tender
- Add broth tomatoes okra crushed red pepper gumbo file salt and pepper
- Cover and simmer 20 minutes Place fish on vegetables
- Cover and simmer 15 minutes longer or until fish flakes easily when tested
- Serve with hot cooked rice Makes 6 servings
