Catsup

Ingredients
- 4 qt. unpeeled tomatoes
- 2 Tbsp. salt
- 3 c. sugar
- 2 c. sharp vinegar
- 1 Tbsp. stick cinnamon
- 1 tsp. ground mustard
- 2 tsp. red pepper
- 1 Tbsp. mixed spices
- 3 Tbsp. cornstarch, mixed with a little vinegar
Directions
- Combine tomatoes, salt, sugar, vinegar, cinnamon, mustard, red pepper and mixed spices in kettle.
- Boil hard for 1 hour.
- Strain. Return to stove and thicken with cornstarch, moistened with a little vinegar.
- Boil for 10 minutes.
- Very good. I prefer to use only 1 teaspoon red pepper.
