Cauliflower Au Gratin

Ingredients

  • 1 medium head cauliflower
  • 3 Tbsp butter
  • 2 Tbsp flour
  • 12 tsp salt
  • 1 c milk
  • 18 tsp mace or nutmeg
  • 18 tsp cayenne pepper
  • 1 Tbsp parsley chopped
  • paprika
  • 34 c day old bread diced into 12-inch pieces
  • 14 c walnuts chopped

Directions

  1. Separate cauliflower into flowerets and cook in boiling salted water for 10 minutes
  2. Drain and turn into a casserole or shallow baking dish
  3. Melt 2 tablespoons butter in a saucepan
  4. Blend in flour and salt
  5. Gradually add milk and cook stirring constantly until thickened
  6. Add spices and parsley
  7. Pour over cauliflower Melt remaining butter and add several good shakes of paprika
  8. Toss with bread cubes
  9. Add walnuts and sprinkle over cauliflower
  10. Bake 10 to 15 minutes in a 400 oven
