Cauliflower Onion Soup
Ingredients
- 1 c chopped onion
- 2 Tbsp butter
- 2 Tbsp flour
- 2 12 c chicken broth
- 2 c cauliflower
- 34 c milk
- 12 c heavy cream
- white pepper
- cayenne pepper
- salt
- minced parsley
Directions
- In large saucepan saute onion in butter until soft
- Stir in flour cook over low heat stirring for 3 minutes
- Remove pan from heat add chicken broth stirring and add cauliflower and bring to boil
- Simmer for 30 minutes
- Puree in blender in 2 batches and return to saucepan
- Add milk cream cayenne pepper white pepper and salt to taste
- Cook until hot and serve sprinkled with minced parsley
- Serves four
