Cauliflower With Tomato Sauce

Ingredients

  • 1 large cauliflower about 2 lb
  • 2 to 3 Tbsp olive oil
  • 1 c coarse fresh white bread crumbs
  • 2 c tomato pasta sauce chunky style
  • 2 Tbsp shredded basil leaves
  • 12 c grated Parmesan cheese
  • 12 c grated Cheddar cheese
  • salt and pepper to taste

Directions

  1. Preheat oven to 350
  2. Trim cauliflower into small florets Brush a deep ovenproof dish with melted butter or oil
  3. Place florets in dish
  4. Heat oil in frying pan
  5. Add the fresh bread crumbs and toss over medium heat until crisp and golden
  6. Season with salt and pepper
  7. Remove from pan and drain on paper towels Combine tomato pasta sauce
  8. Pour over cauliflower in prepared dish
  9. Sprinkle with combined bread crumbs and cheeses
  10. Sprinkle with extra pepper
  11. Bake 20 to 25 minutes or until cauliflower is tender cheese has melted and top is brown
  12. Serves 4 Prep time 20 minutes
