Cavsa From Peru
Ingredients
- 8 medium potatoes
- 3 Tbsp lemon juice
- 12 c vegetable oil
- 1 onion chopped
- 2 sliced tomatoes
- 1 Tbsp ground hot pepper
Directions
- Boil potatoes and mash well
- Add lemon juice oil salt and hot pepper
- Place a layer of mixture in bottom of serving dish Saute onion and spread over potato mixture
- May add other cooked chopped fine vegetables
- Cover with second layer of potatoes Sprinkle with grated cheese optional
- Garnish with olives sliced hard-boiled eggs and serve on lettuce
