Cavsa From Peru

Ingredients

  • 8 medium potatoes
  • 3 Tbsp lemon juice
  • 12 c vegetable oil
  • 1 onion chopped
  • 2 sliced tomatoes
  • 1 Tbsp ground hot pepper

Directions

  1. Boil potatoes and mash well
  2. Add lemon juice oil salt and hot pepper
  3. Place a layer of mixture in bottom of serving dish Saute onion and spread over potato mixture
  4. May add other cooked chopped fine vegetables
  5. Cover with second layer of potatoes Sprinkle with grated cheese optional
  6. Garnish with olives sliced hard-boiled eggs and serve on lettuce
