Charles Skillet Chicken

Ingredients
- 1 2 12 to 3 lb broiler-fryer chicken cut up
- 2 Tbsp cooking oil
- 34 c long grain rice
- 12 c chopped onion
- 2 tsp salt
- 1 tsp poultry seasoning
- 8 oz fresh mushrooms sliced
- 4 medium carrots peeled and cut on bias 12-inch thick
- 2 c water
- paprika
Directions
- In a large skillet brown chicken pieces on all sides about 15 minutes
- Remove and drain all but 2 tablespoons fat from skillet
- Add rice onion salt and poultry seasoning
- Cook and stir until rice is lightly browned add mushrooms carrots and water
- Put chicken on top
- Sprinkle with paprika
- Cover and simmer for about 45 minutes or until chicken and rice are done
