Chayote Pickles
Ingredients
- 15 lb chayotes
- 4 large onions
- 6 red bell peppers
- 1 large bunch celery
- 1 large cauliflower
- 2 lb carrots
- 8 hot peppers remove seeds
- 2 Tbsp mustard seed
- 2 Tbsp celery seed
- 2 tsp turmeric
- 12 tsp ground cloves
- 5 c sugar
- 5 c cider vinegar
Directions
- Peel chayotes
- Chop first seven vegetables and put in large kettle
- Put 12 cup salt on these
- Mix well and let stand for 3 hours
- Mix once or twice
