Chayote Pickles

Ingredients

  • 15 lb chayotes
  • 4 large onions
  • 6 red bell peppers
  • 1 large bunch celery
  • 1 large cauliflower
  • 2 lb carrots
  • 8 hot peppers remove seeds
  • 2 Tbsp mustard seed
  • 2 Tbsp celery seed
  • 2 tsp turmeric
  • 12 tsp ground cloves
  • 5 c sugar
  • 5 c cider vinegar

Directions

  1. Peel chayotes
  2. Chop first seven vegetables and put in large kettle
  3. Put 12 cup salt on these
  4. Mix well and let stand for 3 hours
  5. Mix once or twice
