Cheddar Cheese Biscuits

Ingredients

  • 2 c all-purpose flour
  • 1 Tbsp sugar
  • 2 12 tsp baking powder
  • 1 tsp pepper
  • 12 tsp baking soda
  • 12 tsp salt
  • 6 Tbsp 34 stick chilled unsalted butter cut into 12-inch pieces
  • 1 14 c grated extra sharp Cheddar cheese
  • 1 c about cold buttermilk
  • 1 egg beaten with 1 Tbsp milk glaze
  • poppy seeds

Directions

  1. Preheat oven to 400
  2. Combine first 6 ingredients in processor and blend
  3. Add butter and cut in using onoff turns until fine meal forms
  4. Transfer to large bowl
  5. Mix in cheese
  6. Can be prepared 4 hours ahead cover and chill
  7. Mix enough buttermilk into flour mixture to bind dough
  8. Turn out onto floured surface and knead gently until combined about 10 turns
  9. Pat out dough to 34-inch thickness
  10. Using 3-inch diameter cookie cutter cut out biscuits
  11. Gather scraps pat out to 34-inch thickness and cut additional biscuits
  12. Transfer biscuits to ungreased cookie sheet Brush biscuits with egg glaze and sprinkle with poppy seed
  13. Bake until golden brown and firm to touch about 18 minutes
  14. Serve warm
  15. Makes about 10
