Cheer-Up Chicken Soup
Ingredients
- 2 c water
- 1 14 oz can chicken broth
- 3 boned and skinned chicken breasts halved
- 12 c thinly sliced carrots
- 12 c thinly sliced celery
- 1 lb 3 medium potatoes cubed
- 8 oz sliced mushrooms
- 12 c thinly sliced green onions
- 14 tsp thyme
- salt and pepper to taste
Directions
- In 3-quart saucepan combine water and broth bring to a boil Meanwhile cut chicken into 12-inch chunks
- Add to liquid with carrots celery and potatoes
- Simmer for 10 minutes
- Add mushrooms onions and thyme
- Simmer for 15 to 20 minutes
- Add salt and pepper
- Serves 4 to 6
