Cheese-Stuffed Chicken Breasts

Ingredients

  • 14 c chopped green onions
  • 1 tsp dried parsley flakes
  • 14 tsp salt
  • 18 tsp pepper
  • 18 tsp garlic powder
  • 4 whole boneless chicken breasts pounded to 18-inch thickness
  • 4 slices 1 oz each Swiss cheese
  • 14 c all-purpose flour
  • 12 c seasoned fine dry bread crumbs
  • 2 Tbsp grated Parmesan cheese
  • 2 eggs slightly beaten
  • 12 c butter

Directions

  1. Preheat oven to 375
  2. In small mixing bowl combine green onions parsley flakes salt pepper and garlic powder
  3. Set aside
  4. Place 1 piece of cheese in center of each chicken breast Top with 14 of onion mixture
  5. Starting at narrow edge roll each breast tightly tucking in sides to enclose cheese and onion mixture
  6. Dredge with flour
  7. In small bowl combine bread crumbs and Parmesan cheese
  8. Dip each rolled breast in beaten egg then in crumb mixture to coat
