Cheese-Stuffed Chicken Breasts
Ingredients
- 14 c chopped green onions
- 1 tsp dried parsley flakes
- 14 tsp salt
- 18 tsp pepper
- 18 tsp garlic powder
- 4 whole boneless chicken breasts pounded to 18-inch thickness
- 4 slices 1 oz each Swiss cheese
- 14 c all-purpose flour
- 12 c seasoned fine dry bread crumbs
- 2 Tbsp grated Parmesan cheese
- 2 eggs slightly beaten
- 12 c butter
Directions
- Preheat oven to 375
- In small mixing bowl combine green onions parsley flakes salt pepper and garlic powder
- Set aside
- Place 1 piece of cheese in center of each chicken breast Top with 14 of onion mixture
- Starting at narrow edge roll each breast tightly tucking in sides to enclose cheese and onion mixture
- Dredge with flour
- In small bowl combine bread crumbs and Parmesan cheese
- Dip each rolled breast in beaten egg then in crumb mixture to coat
