Cheese And Onion Potatoes

Ingredients
- 14 c buttermargarine
- 4 medium unpeeled red potatoes
- 2 Tbsp dried minced onion
- pepper to taste
- 13 c Cheddar cheese shredded
- chopped fresh parsley
Directions
- In skillet melt butter add potatoes which have been sliced 14-inch thick
- Add onion and pepper and toss to coat
- Cover and cook stirring occasionally until potatoes are tender about 10 minutes
- Uncover cook until potatoes are browned about 5 to 7 minutes
- Top with cheese cover and remove from heat
- Let set for several minutes
- Sprinkle with parsley before serving Serves 4
