Cheese Pie

Ingredients
- 1 12 pie shells
- 4 eggs
- 1 c sugar
- 18 tsp salt
- 1 12 Tbsp lemon juice
- 1 12 tsp grated lemon rind
- 34 c cream
- 13 c cottage cheese
- 4 Tbsp flour
- 14 c chopped nut meats
Directions
- Line a deep dish or pie pan with pastry shell
- Beat eggs add sugar and continue beating until light
- Add salt lemon juice and rind cream cottage cheese and flour beat thoroughly and strain through a fine sieve
- Pour into pastry shell
- Cut 12 pie crust into tiny pieces
- Sprinkle it and nutmeats on top and bake at 350 for about 1 hour or until center is firm
- Let stand about 1 hour or until completely cooled
