Cheesy Mashed Potatoes
Ingredients
- 9 medium potatoes
- 2 c Cheddar cheese
- 14 c butter
- 1 8 oz sour cream
- 1 Tbsp chopped green onion
- 12 tsp salt
- 14 tsp pepper
- paprika
Directions
- Add water to unpeeled potatoes just to cover
- Sprinkle with salt
- Bring to boiling for 30 to 35 minutes
- Drain
- Peel and shred potatoes with a grater
- In a large mixing bowl combine potatoes cheese and butter stir until butter is melted
- Stir in sour cream green onion salt and the pepper
- Transfer to a greased pan
- Bake uncovered in a 325 oven for 45 minutes Sprinkle with paprika
- Makes 8 servings
