Cheesy Potato Casserole

Ingredients

  • 7 medium potatoes about 2 lb
  • 14 c butter or margarine melted
  • 1 small onion chopped
  • 1 tsp salt
  • 14 tsp pepper
  • 1 8 oz carton sour cream
  • 1 10 34 oz can cream of chicken soup undiluted
  • 2 c 8 oz shredded Cheddar cheese
  • 3 Tbsp butter or margarine melted
  • 1 12 c herb seasoned stuffing mix

Directions

  1. Cook potatoes in boiling water to cover for 30 minutes or until tender
  2. Drain and let cool to touch
  3. Peel and cut into 14-inch strips
  4. Set aside
  5. Combine 14 cup butter and next 5 ingredients in a large bowl
  6. Gently stir in potatoes and cheese
