Cheesy Squash Custard Casserole

Ingredients

  • 2 Tbsp oil
  • 2 Tbsp butter
  • 4 c sliced squash
  • 1 c chopped onion
  • 1 garlic clove minced
  • 2 eggs beaten
  • 1 12 c grated Swiss cheese
  • 12 c grated Parmesan cheese
  • salt and pepper to taste

Directions

  1. Heat oil and butter in large skillet
  2. Add squash onion and garlic and saute until vegetables are crisp-tender
  3. Combine beaten eggs cheeses dill salt and pepper
  4. Transfer vegetables to buttered 8-inch square baking dish
  5. Pour egg mixture over
  6. Bake at 350 for 25 to 30 minutes or until set
  7. Makes 6 to 8 servings
