Cherry Nut Bread

Ingredients

  • 2 12 c all-purpose flour
  • 1 c buttermilk
  • 1 c chopped pecans or walnuts
  • 12 c sugar
  • 12 c firmly packed brown sugar
  • 2 eggs beaten
  • 14 c shortening
  • 14 c maraschino cherry juice
  • 1 Tbsp baking powder
  • 12 tsp salt
  • 12 tsp soda
  • 12 c chopped maraschino cherries

Directions

  1. Combine all ingredients except cherries in a mixing bowl Blend on low speed of electric mixer 15 seconds increase to medium speed and blend 30 additional seconds
  2. Stir in cherries Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan Bake at 350
  3. for 1 hour and 10 to 15 minutes or until wooden pick inserted in center comes out clean
  4. Cool 10 minutes in pan remove to wire rack and cool completely
  5. Yields 1 loaf
