Cherry Nut Cake
Ingredients
- 12 c shortening
- 1 tsp lemon extract
- 1 14 c sugar
- 2 eggs separate
- 2 c flour
- 2 12 tsp baking powder
- 12 tsp salt
- 13 c milk
- 1 jar 5 oz maraschino cherries drained and chopped reserve juice
- 13 c cherry juice
- 12 c nuts
Directions
- Cream together shortening and lemon extract add sugar and beat until fluffy
- Add egg yolks and beat well after each addition
- Sift together dry ingredients 2 times
- Add liquids and dry ingredients alternately to creamed mixture beating only until smooth after each addition
- Stir in nuts and cherries
- Fold in stiffly beaten egg whites
- Bake at 375 for 25 minutes
