Chewy Oatmeal Cookies
Ingredients
- 12 c butter softened
- 12 c lard softened
- 1 c sugar
- 1 c firmly packed brown sugar
- 2 eggs
- 2 c all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 12 c quick cooking oats uncooked
- 12 c chopped pecans
- 12 c flaked coconut
Directions
- Cream butter and lard in a large mixing bowl gradually add sugar beating well
- Add eggs and mix well
- Combine flour baking powder soda and salt in a small mixing bowl add to creamed mixture stirring until well blended
- Add oats pecans and coconut mixing well
- Drop by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets
- Bake at 350 for 6 to 8 minutes
- Remove from cookie sheets cool on wire racks
- Yields 10 dozen
