Chewy Raisin Walnut Shortbread Bars

Ingredients
- 1 14 c all-purpose flour
- 12 c sugar
- 12 c butter or margarine
- 2 eggs
- 12 c firmly packed brown sugar
- 1 tsp vanilla
- 18 tsp baking soda
- 1 c chopped walnuts
- 1 c raisins or dates
- 12 c flaked coconut or oatmeal optional
Directions
- Heat oven to 350
- Lightly grease an 8-inch square pan Combine flour and sugar
- Using pastry blender or fork cut in butter until mixture resembles fine meal
- Press into greased pan Bake for 20 minutes or just until edges are lightly golden Meanwhile combine eggs brown sugar and vanilla beat well
- Stir in baking soda walnuts raisins and coconut
- Spoon over hot crust spread to cover evenly
- Return to oven bake an additional 20 to 25 minutes or until top is set
- Cool completely
- Cut into 20 bars
