Chicken-Avocado Salad
Ingredients
- 1 13 12 oz can pineapple chunks
- 2 c cubed cooked chicken
- 1 12 Tbsp minced green onion
- 1 12 Tbsp minced parsley
- 1 12 tsp curry powder
- 2 Tbsp lemon juice
- 1 tsp salt
- 1 c plain yogurt
- 18 tsp pepper
- 3 avocados
Directions
- Drain pineapple reserving 3 tablespoons syrup
- Combine pineapple chicken onion parsley curry lemon juice salt and pepper
- Combine yogurt with pineapple syrup
- Mix 13 cup yogurt mixture into chicken mixture
- Toss lightly
- Cut avocados into halves and remove seed
- They may be peeled or not as desired Spoon chicken into avocado halves
