Chicken-Broccoli Casserole
Ingredients
- 3 c cooked broccoli cuts
- 12 oz chicken cooked cut into chunks
- 12 tsp lemon juice
- 6 Tbsp lite mayonnaise
- 2 chicken bouillon cubes
- 2 c skim milk or 12
- 2 12 Tbsp flour
- 12 tsp curry powder
- 6 oz grated low-fat cheddar cheese
- 2 slices bread crumbled
- 1 Tbsp diet margarine
Directions
- Layer broccoli in a 13 x 9-inch baking dish
- Layer chicken on top of broccoli
- Mix lemon juice mayonnaise bouillon cubes skim milk flour and curry powder in a saucepan
- Cook over medium-high heat until it thickens
- Pour this sauce over the broccoli and chicken
- Next add a layer of cheese
- Melt the butter and pour it over the bread crumbs
- Put this on top as the last layer
- Bake at 350 degrees for 30 minutes
