Chicken A La KingLow-Fat

Ingredients

  • 1 Tbsp margarine
  • 14 c chopped onion
  • 2 c skim milk
  • 12 tsp salt
  • 14 tsp paprika
  • 3 4 oz skinned and boned chicken breast halves cut in bite size pieces
  • 1 2 oz jar diced pimento drained
  • 4 slices wheat bread trimmed and toasted
  • 12 c sliced mushrooms
  • 14 c all-purpose flour
  • 14 c frozen English peas thawed
  • 12 tsp pepper

Directions

  1. Melt margarine in a large nonstick skillet over medium heat Add chicken and onion cook stirring constantly 3 to 5 minutes or until chicken is browned
  2. Add mushrooms cook 1 minute
  3. Stir in flour and cook for 1 minute stirring constantly
  4. Gradually add milk and next 4 ingredients
  5. Cook over medium heat stirring constantly until mixture is thickened and bubbly
  6. Cut each slice of toasted bread into 4 triangles
  7. Serve chicken mixture with 4 toast triangles sprinkle with paprika
