Chicken A LOrange
Ingredients
- 2 broiler size 2 to 2 12 lb chickens quartered
- 2 Tbsp butter
- 12 tsp salt
- 14 tsp pepper
- 14 tsp paprika
- 14 tsp dried tarragon
- 12 c minced green onion
- 1 clove garlic peeled and minced finely
- 12 c chopped celery
- 4 more Tbsp butter
- 14 c Cointreau
- 2 Tbsp lemon juice
- 2 c chicken stock or broth
- 14 c tomato paste
- minced parsley for garnish
Directions
- Preheat oven to 375
- Arrange quartered chicken pieces in a long shallow baking dish
- Bake in preheated oven for 30 minutes turning pieces twice during cooking
- In a small skillet melt butter stir in salt pepper paprika and tarragon pour evenly over chicken pieces
- Continue to bake for about 15 minutes until chicken is tender and browned
- While chicken bakes prepare sauce
