Chicken A LOrange

Ingredients

  • 2 broiler size 2 to 2 12 lb chickens quartered
  • 2 Tbsp butter
  • 12 tsp salt
  • 14 tsp pepper
  • 14 tsp paprika
  • 14 tsp dried tarragon
  • 12 c minced green onion
  • 1 clove garlic peeled and minced finely
  • 12 c chopped celery
  • 4 more Tbsp butter
  • 14 c Cointreau
  • 2 Tbsp lemon juice
  • 2 c chicken stock or broth
  • 14 c tomato paste
  • minced parsley for garnish

Directions

  1. Preheat oven to 375
  2. Arrange quartered chicken pieces in a long shallow baking dish
  3. Bake in preheated oven for 30 minutes turning pieces twice during cooking
  4. In a small skillet melt butter stir in salt pepper paprika and tarragon pour evenly over chicken pieces
  5. Continue to bake for about 15 minutes until chicken is tender and browned
  6. While chicken bakes prepare sauce
