Chicken Amaretto
Ingredients
- 6 chicken breasts halved
- salt pepper garlic powder curry powder to taste
- 1 tsp cornstarch
- flour
- 14 c butter
- 14 c Amaretto
- 1 lemon
- 12 c chicken broth
- 12 lb fresh mushrooms thickly sliced
Directions
- Cut chicken into 1-inch wide strips
- Sprinkle with salt pepper garlic powder and curry powder
- Roll strips in flour Heat butter and brown chicken pieces on all sides
- Add mushrooms Amaretto lemon juice and rind
- Simmer 5 to 10 minutes
- Mix chicken broth and cornstarch
- Stir into skillet and stir until it bubbles and thickens
- Serve over rice or pasta
