Chicken And Andouille Smoked Sausage Gumbo
Ingredients
- 1 2 to 3 lb chicken cut up
- salt
- garlic powder
- ground red pepper cayenne
- 1 c finely chopped onions
- 1 c finely chopped green bell peppers
- 34 c finely chopped celery
- 1 14 c all-purpose flour
- hot cooked rice
- 12 tsp salt
- 12 tsp garlic powder
- 12 tsp ground red pepper
- vegetable oil
- 12 lb andouille smoked sausage or any other good sausage
- 1 tsp minced garlic
- 3 cans chicken stock
Directions
- Remove excess fat from chicken
- Rub with salt garlic powder and red pepper
- Let stand 30 minutes
- Combine onions bell peppers and celery in a medium bowl set aside
- Combine flour 12 teaspoon salt 12 teaspoon garlic powder and 12 teaspoon red pepper in paper or plastic bag
- Add chicken pieces and shake until chicken is coated
- Reserve 12 cup of the flour
