Chicken And Andouille Smoked Sausage Gumbo

Ingredients

  • 1 2 to 3 lb chicken cut up
  • salt
  • garlic powder
  • ground red pepper cayenne
  • 1 c finely chopped onions
  • 1 c finely chopped green bell peppers
  • 34 c finely chopped celery
  • 1 14 c all-purpose flour
  • hot cooked rice
  • 12 tsp salt
  • 12 tsp garlic powder
  • 12 tsp ground red pepper
  • vegetable oil
  • 12 lb andouille smoked sausage or any other good sausage
  • 1 tsp minced garlic
  • 3 cans chicken stock

Directions

  1. Remove excess fat from chicken
  2. Rub with salt garlic powder and red pepper
  3. Let stand 30 minutes
  4. Combine onions bell peppers and celery in a medium bowl set aside
  5. Combine flour 12 teaspoon salt 12 teaspoon garlic powder and 12 teaspoon red pepper in paper or plastic bag
  6. Add chicken pieces and shake until chicken is coated
  7. Reserve 12 cup of the flour
