Chicken And Dressing

Ingredients

• 5 c corn bread
• 6 slices bread
• 4 to 6 eggs
• 2 c chopped celery
• 1 12 c shallots with tops cut fine
• 12 c chopped onion
• 14 c butter
• 4 tsp salt
• 2 tsp black pepper
• 1 tsp sage optional

Directions

1. Cook medium-sized hen
2. Cool and debone
3. To broth mix corn bread and bread
4. Saute celery shallots and onions in butter until done but not brown
5. Add to broth mixture
6. Add seasonings to taste
7. Add beaten eggs
8. Be sure mixture is moist
9. If you need more broth add 1 can chicken broth
10. Pour into greased Dutch oven and cook at 350 until slightly brown or as desired
