Chicken And Dumplings
Ingredients
- 4 Tbsp shortening or lard
- 1 12 c sifted flour
- 1 tsp salt
- 14 tsp soda
- pinch of sugar
- 12 c buttermilk
- 1 egg beaten
- 1 large fryer cut into pieces
- 2 c chicken stock unsalted
- 2 c water
- 2 Tbsp butter
- black pepper and salt to taste
- 14 to 1 c milk
Directions
- Cut shortening into flour
- Combine 1 teaspoon salt soda and sugar with flour
- Make a well in center of flour
- Add buttermilk and egg mix as for biscuits
- Roll into a ball
- Put in freezer while chicken is cooking
- Simmer do not boil seasoned chicken in water and stock until tender
- Skin and debone chicken set aside
