Chicken And Mushroom Casserole

Ingredients

  • 2 Tbsp butter
  • 4 to 6 skinless chicken breasts
  • 1 small can cream of mushroom soup undiluted
  • 8 oz sour cream
  • 4 oz can sliced mushrooms drained
  • cooked rice or pasta

Directions

  1. Melt butter in heavy covered skillet
  2. Brown chicken on both sides
  3. Remove chicken and drain excess fat
  4. Stir in soup and loose pan drippings
  5. Add sour cream stirring until well mixed Add chicken
  6. Cover and simmer over very low heat until tender about 50 to 60 minutes
  7. Stir in mushrooms last couple of minutes Serve over pasta or rice
