Chicken And Sausage Jambalaya

Ingredients

  • 2 c onion
  • 1 c chopped green pepper
  • 5 ribs celery chopped
  • 12 c oil
  • 2 to 3 tsp chopped garlic
  • 1 c chopped parsley 14 c dried
  • 2 to 4 lb chicken breasts
  • 4 c bouillon chicken
  • 3 to 4 c rice
  • 3 tsp salt
  • 1 tsp cayenne pepper
  • 2 to 3 tsp Worcestershire sauce
  • 2 c water
  • 2 lb smoked sausage cut in rounds

Directions

  1. Saute onion green pepper and celery in oil over low heat Add garlic and parsley
  2. Remove from pot
  3. Brown chicken slowly in remaining oil
  4. Add bouillon vegetables rice salt cayenne pepper Worcestershire and water
  5. Cook over low heat 1 hour
  6. Add sausage
  7. Add more water if necessary and correct salt
