Chicken And Sausage Jambalaya

Ingredients

  • 1 chicken cut into serving pieces 2 12 to 3 lb
  • 34 lb smoked sausage cut into 12-inch slices
  • 14 c vegetable oil
  • 2 14 c chopped onion about 1 lb
  • 12 c chopped green pepper
  • 2 cloves garlic minced
  • 2 green onions chopped
  • 5 c water
  • 1 34 c rice uncooked
  • 1 tsp salt
  • 14 to 12 tsp black pepper
  • 14 to 12 tsp red pepper

Directions

  1. Cook chicken in oil in a Dutch oven until chicken is golden brown remove chicken
  2. Drain reserving 2 tablespoons drippings in Dutch oven
  3. Saute onion and next 3 ingredients in drippings Add water rice salt peppers chicken and sausage bring to a boil
  4. Cover reduce heat and let simmer until chicken is done and rice is tender and water is absorbed
  5. Let stand 5 minutes before serving
