Chicken Bologna
Ingredients
- 25 lb fresh chicken
- 12 lb Tender Quick
- 1 oz black pepper
- 12 c sugar
- 2 tsp saltpetre
- 3 Tbsp liquid smoke
- 2 tsp garlic
Directions
- Wipe off bologna and
- leave
- skins
- on
- Cut
- into 4 or 5-inch lengths
- Pack in jars lengthwise and add 12 cup water to each quart
- Cook 1 hour in hot water bath or 30 minutes at 10 pound pressure
