Chicken Breast Monterey

Ingredients

  • 6 chicken breasts
  • salt and pepper to taste
  • flour
  • 2 Tbsp butter
  • 12 c cooking sherry
  • 1 small onion sliced
  • 6 fresh mushrooms sliced
  • 12 green pepper sliced
  • 6 14-inch slices Monterey Jack cheese

Directions

  1. Sprinkle chicken filets with seasoning
  2. Coat with flour Brown for 5 minutes on each side in butter over medium heat Reduce heat to low
  3. Add next 4 ingredients
  4. Simmer covered for 45 minutes or until chicken is tender
  5. Top each filet with one piece of cheese
  6. Let stand covered for 5 minutes or until cheese begins to melt
