Chicken Breast Monterey
Ingredients
- 6 chicken breasts
- salt and pepper to taste
- flour
- 2 Tbsp butter
- 12 c cooking sherry
- 1 small onion sliced
- 6 fresh mushrooms sliced
- 12 green pepper sliced
- 6 14-inch slices Monterey Jack cheese
Directions
- Sprinkle chicken filets with seasoning
- Coat with flour Brown for 5 minutes on each side in butter over medium heat Reduce heat to low
- Add next 4 ingredients
- Simmer covered for 45 minutes or until chicken is tender
- Top each filet with one piece of cheese
- Let stand covered for 5 minutes or until cheese begins to melt
