Ingredients

  • 2 whole chicken breasts
  • 12 c all-purpose flour
  • 14 tsp nutmeg freshly grated
  • salt and freshly ground black pepper
  • 2 eggs lightly beaten
  • 34 c bread crumbs
  • 14 c Parmesan cheese grated
  • 13 c butter melted
  • 4 lemon wedges

Directions

  1. Split and bone chicken breasts
  2. Remove and discard the skin Season the flour with salt and pepper to taste add nutmeg Dredge the breasts lightly in the flour mixture
  3. Dip the breasts into the eggs and then in a mixture of bread crumbs and Parmesan cheese coating thoroughly
  4. Brown on all sides in the melted butter
  5. Serve hot with lemon wedges
