Chicken Breasts Ala Parmigiana

Ingredients
- 2 whole chicken breasts
- 12 c all-purpose flour
- 14 tsp nutmeg freshly grated
- salt and freshly ground black pepper
- 2 eggs lightly beaten
- 34 c bread crumbs
- 14 c Parmesan cheese grated
- 13 c butter melted
- 4 lemon wedges
Directions
- Split and bone chicken breasts
- Remove and discard the skin Season the flour with salt and pepper to taste add nutmeg Dredge the breasts lightly in the flour mixture
- Dip the breasts into the eggs and then in a mixture of bread crumbs and Parmesan cheese coating thoroughly
- Brown on all sides in the melted butter
- Serve hot with lemon wedges
- Serves 4
