Chicken Breasts With Vegetables

Ingredients

  • vegetable oil
  • 1 onion sliced
  • 2 chicken breast halves skinned and boned
  • 1 tsp mayonnaise
  • 1 tsp Dijon mustard
  • 2 carrots cut in strips
  • 1 zucchini sliced
  • 1 can sliced mushrooms or may use fresh
  • salt and pepper to taste
  • 1 Tbsp butter or margarine
  • basil to taste
  • garlic powder to taste
  • paprika

Directions

  1. Tear off 2 12 x 18-inch sheets of aluminum foil and rub them lightly with oil
  2. Place onion slices on each sheet
  3. Flatten breasts to 14-inch thick and place over onions
  4. Combine mayonnaise and mustard
  5. Spread over each chicken breast
  6. Top with carrots zucchini and mushrooms
  7. Season with salt and pepper
  8. Dot with butter
  9. Sprinkle with basil garlic powder and paprika
  10. Seal edges tightly to make package
  11. Bake at 400 for 30 minutes
  12. Serves 2
