Chicken Breasts With Vegetables
Ingredients
- vegetable oil
- 1 onion sliced
- 2 chicken breast halves skinned and boned
- 1 tsp mayonnaise
- 1 tsp Dijon mustard
- 2 carrots cut in strips
- 1 zucchini sliced
- 1 can sliced mushrooms or may use fresh
- salt and pepper to taste
- 1 Tbsp butter or margarine
- basil to taste
- garlic powder to taste
- paprika
Directions
- Tear off 2 12 x 18-inch sheets of aluminum foil and rub them lightly with oil
- Place onion slices on each sheet
- Flatten breasts to 14-inch thick and place over onions
- Combine mayonnaise and mustard
- Spread over each chicken breast
- Top with carrots zucchini and mushrooms
- Season with salt and pepper
- Dot with butter
- Sprinkle with basil garlic powder and paprika
- Seal edges tightly to make package
- Bake at 400 for 30 minutes
- Serves 2
