Chicken Carrie

Ingredients
- 3 Tbsp melted chicken fat
- 1 large onion thinly cut
- 1 large green pepper cut lengthwise
- 4 large chicken breasts
- 12 plus c chicken broth I use 1 can Campbells chicken broth
Directions
- Use a skillet or wok
- Saute onion green pepper salt and pepper in chicken fat
- Place potatoes on top of ingredients in skillet or wok then chicken breasts on top of potatoes
- Pour in broth
- Cover and simmer gently about 30 minutes
- Do not stir
