Chicken Chianti
Ingredients
- 1 pkg boneless chicken thighs 6
- 2 Tbsp olive oil
- 8 oz sliced crimini or white mushrooms
- 3 Tbsp unbleached flour
- 1 c chopped onion
- 12 c chopped carrot
- 1 c Chianti or other red wine
- 1 c chicken broth
- 1 Tbsp tomato paste
- 1 to 2 cloves garlic
- 1 tsp dried Italian seasoning
- salt and ground pepper to taste
Directions
- Remove and discard visible fat from chicken
- Cut meat into 1 12-inch cubes and reserve
- Heat oil in large nonstick skillet over medium-high heat
- Add mushrooms and saute until lightly browned
- Remove with slotted spoon and set aside
