Chicken Curry Salad

Ingredients

  • 1 20 oz can pineapple chunks undrained
  • 12 c Miracle Whip dressing
  • 1 Tbsp Dijon mustard
  • 12 tsp curry powder
  • 14 tsp salt
  • 4 c chopped cooked chicken
  • 23 c golden raisins
  • 23 c slivered almonds toasted
  • 12 c chopped celery

Directions

  1. Drain pineapple reserving 3 tablespoons liquid
  2. Mix reserved 3 tablespoons liquid dressing mustard curry and salt in a large bowl
  3. Add pineapple and remaining ingredients mix lightly Refrigerate
  4. Spoon chicken mixture over lettuce-lined platter if desired
  5. Makes 4 servings
