Chicken Dijon
Ingredients
- 3 chicken breasts halved
- 12 c Dijon mustard
- freshly ground pepper to taste
- 12 c chicken broth
- 12 c light cream
- salt to taste
Directions
- Combine all ingredients except cream and allow to marinate for 1 to 2 hours
- Preheat oven to 350
- Bake basting occasionally about 30 minutes or until chicken is done
- Remove baking dish from the oven and place chicken on a warm platter
- Skim off fat from the cooking juices and set the baking dish over medium heat
- Add cream
- Simmer 5 to 10 minutes
- Spoon sauce over chicken and serve
- Serves 4 to 6
