Chicken Dijon

Chicken Dijon

Ingredients

  • 3 chicken breasts halved
  • 12 c Dijon mustard
  • freshly ground pepper to taste
  • 12 c chicken broth
  • 12 c light cream
  • salt to taste

Directions

  1. Combine all ingredients except cream and allow to marinate for 1 to 2 hours
  2. Preheat oven to 350
  3. Bake basting occasionally about 30 minutes or until chicken is done
  4. Remove baking dish from the oven and place chicken on a warm platter
  5. Skim off fat from the cooking juices and set the baking dish over medium heat
  6. Add cream
  7. Simmer 5 to 10 minutes
  8. Spoon sauce over chicken and serve
  9. Serves 4 to 6
