Chicken Dijon

Ingredients

  • 2 whole chicken breasts split boned and skinned
  • 2 Tbsp butter or margarine
  • 12 Tbsp all-purpose flour
  • 12 c chicken broth
  • 14 c half and half
  • 1 Tbsp Dijon mustard

Directions

  1. Saute chicken in butter over low heat about 20 minutes or until tender
  2. Remove chicken to a warm platter
  3. Blend flour into pan drippings cook over low heat stirring constantly until bubbly
  4. Gradually stir in broth and half and half cook until smooth and thickened stirring constantly
  5. Stir in mustard
  6. Add chicken cover and simmer about 10 minutes
  7. Yield
  8. 2 servings
