Chicken Enchilada Casserole

Ingredients

  • 2 Tbsp salad oil
  • 1 medium onion chopped
  • 4 c cooked chicken shredded
  • 2 15 oz cans stewed tomatoes
  • 1 pkg 12 corn tortillas
  • 1 pkg taco seasoning
  • 1 can ripe pitted olives sliced
  • 3 c Jack cheese grated

Directions

  1. Heat oil and saut the onion
  2. Add the chicken tomatoes and taco seasoning
  3. Bring to a boil
  4. Reduce heat and simmer for 15 minutes
  5. Layer 4 corn tortillas on the bottom of a 9 x 13-inch glass pan
  6. Layer 13 chicken mixture olives and cheese
  7. Repeat layers 2 times ending with cheese
  8. Bake uncovered in 350 oven for 30 minutes
