Chicken Enchiladas With Sour Cream Sauce And Chile Con Queso
Ingredients
- 2 Tbsp olive oil
- 1 tsp chopped garlic
- 1 Tbsp fresh cilantro
- 12 tsp dried thyme
- 1 small can chopped green chiles drained
- 4 c chicken cooked and shredded
- salt and pepper to taste
- 8 corn tortillas
- 1 c chopped yellow onion
- 1 12 c diced Roma tomatoes
- 12 tsp dried marjoram
- 12 tsp dried oregano
Directions
- Heat oil in a large skillet
- Add onion and garlic saute over medium heat until the onion is translucent
- Do not brown
- Stir in tomatoes chicken herbs and spices
- Set aside while you prepare tortillas
