Chicken Florentine

Ingredients

  • 1 lb chicken breasts skinned and boned
  • 18 tsp pepper
  • 34 c chicken broth
  • 2 Tbsp dry white wine
  • 1 lb spinach
  • 2 tsp cornstarch
  • 3 oz Neufchatel cheese cut up
  • lemon juice
  • paprika
  • lemon slices garnish

Directions

  1. Place chicken in skillet
  2. Sprinkle with pepper
  3. Add broth and wine bring to boiling
  4. Reduce heat
  5. Cover and simmer 25 to 30 minutes
  6. Remove chicken with a slotted spoon
  7. Keep warm Reserve broth in skillet
