Chicken For A Crowd

Ingredients
- 4 c diced cooked chicken or turkey
- 1 c chopped celery
- 2 Tbsp grated onion
- 1 Tbsp parsley flakes
- 1 Tbsp chopped pimiento
- 2 Tbsp lemon juice
- 12 tsp salt
- 12 c mayonnaise
- a little curry
- water chestnuts if desired
- 8 slices bread cubed
- 3 eggs
- 1 pt half and half cream
- 1 can cream of mushroom or cream of chicken soup
- 1 c grated Cheddar cheese
Directions
- Put 4 slices cubed bread on bottom of a greased 9 x 13-inch Pyrex dish
- Add chicken mixture
- Top with 4 slices of cubed bread
- Mix eggs and half and half cream
- Pour over casserole Let stand covered in refrigerator overnight
- Next day spread soup over mixture
- Top with grated Cheddar cheese
- Bake at 350 for 1 hour
- Serve immediately
- Serves 10
