Chicken Fricasse
Ingredients
- 1 3 12 lb chicken cut up
- 3 Tbsp butter
- 2 Tbsp flour
- 13 c chopped onion
- 1 clove garlic minced
- 5 sprigs fresh tarragon
- 1 carrot peeled quartered and cut in 1-inch lengths
- 14 lb mushrooms
- 1 12 c water
- 1 c cream
- 1 Tbsp chopped tarragon
Directions
- Fry chicken in butter use heavy skillet for 5 minutes add onion garlic and tarragon sprigs
- Sprinkle with flour stirring to distribute flour evenly
- Add water and carrots
- Cover and cook for 20 minutes
- Remove chicken and keep warm
- Let the sauce cook down stirring often for about 5 minutes
- Remove tarragon add cream salt and pepper
- Simmer 3 minutes
- Stir in chopped tarragon and serve with rice
- Serves four
