Chicken Fricasse

Ingredients

  • 1 3 12 lb chicken cut up
  • 3 Tbsp butter
  • 2 Tbsp flour
  • 13 c chopped onion
  • 1 clove garlic minced
  • 5 sprigs fresh tarragon
  • 1 carrot peeled quartered and cut in 1-inch lengths
  • 14 lb mushrooms
  • 1 12 c water
  • 1 c cream
  • 1 Tbsp chopped tarragon

Directions

  1. Fry chicken in butter use heavy skillet for 5 minutes add onion garlic and tarragon sprigs
  2. Sprinkle with flour stirring to distribute flour evenly
  3. Add water and carrots
  4. Cover and cook for 20 minutes
  5. Remove chicken and keep warm
  6. Let the sauce cook down stirring often for about 5 minutes
  7. Remove tarragon add cream salt and pepper
  8. Simmer 3 minutes
  9. Stir in chopped tarragon and serve with rice
  10. Serves four
