Chicken Fricassee

Ingredients

  • 1 fryer cut up
  • 2 c water
  • 1 12 tsp salt
  • 12 c green onion chopped
  • 34 c roux
  • 1 onion chopped
  • 1 tsp red pepper
  • 12 c parsley chopped

Directions

  1. In heavy pan combine chicken roux onion salt pepper and water
  2. Cook covered on low heat for about 1 hour or until chicken is tender
  3. Add green onions and parsley
  4. Cook another 10 minutes
  5. Serve with cooked white rice
