Chicken Fried Rice
Ingredients
- 1 c diced cooked chicken
- 2 Tbsp soy sauce
- 1 c uncooked long grain rice
- 14 c canola oil
- 2 12 c chicken broth
- 12 c chopped onion
- 14 c chopped green pepper
- 14 c thinly sliced celery
- 1 c lightly steamed broccoli flowerets
Directions
- Combine chicken and soy sauce let stand 15 minutes
- Heat oil over medium heat add rice and cook until golden brown stirring frequently
- Add chicken and broth reduce heat and simmer covered for 20 to 25 minutes or until rice is tender
- Remove cover stir in onion green pepper celery and broccoli
- Cook until liquid is absorbed
- Serve immediately with extra soy sauce
