Chicken Jambalaya
Ingredients
- 3 large hens cubed
- salt and pepper to taste
- cooking oil
- 3 lb onions chopped
- 1 head garlic chopped
- Tabasco
- 9 c raw rice
Directions
- Season chicken with salt and pepper
- Brown in oil
- Remove chicken and saute onions and garlic until soft
- Add chicken and 20 cups of water
- Bring to a boil and add salt pepper and Tabasco
- Add rice
- Bring to a boil and reduce heat to a simmer Stir twice while cooking
- Cook until water is absorbed and chicken is tender
- Yields 24 servings
