Chicken Jerusalem
Ingredients
- 2 Tbsp oil
- 1 2 12 to 3 lb fryer cut into seving pieces
- flour
- 12 lb fresh mushrooms cut into pieces
- 1 6 oz jar marinated artichoke hearts drained
- 2 cloves garlic minced
- 12 tsp oregano
- 12 tsp ground pepper
- 2 c fresh tomatoes
- 12 c sherry
Directions
- Heat oil in frying pan
- Dredge chicken pieces in flour and lightly brown in oil
- Place in casserole with mushrooms and artichoke hearts
- Stir in garlic and spices with tomatoes Pour over chicken
- Bake at 350 for 1 to 1 12 hours or until tender adding sherry during last few minutes of cooking time Makes 4 servings
