Chicken Jerusalem

Ingredients

  • 2 Tbsp oil
  • 1 2 12 to 3 lb fryer cut into seving pieces
  • flour
  • 12 lb fresh mushrooms cut into pieces
  • 1 6 oz jar marinated artichoke hearts drained
  • 2 cloves garlic minced
  • 12 tsp oregano
  • 12 tsp ground pepper
  • 2 c fresh tomatoes
  • 12 c sherry

Directions

  1. Heat oil in frying pan
  2. Dredge chicken pieces in flour and lightly brown in oil
  3. Place in casserole with mushrooms and artichoke hearts
  4. Stir in garlic and spices with tomatoes Pour over chicken
  5. Bake at 350 for 1 to 1 12 hours or until tender adding sherry during last few minutes of cooking time Makes 4 servings
