Chicken Livers Smothered In Onions

Ingredients

  • 1 lb chicken livers
  • 12 tsp salt
  • 14 tsp pepper
  • 14 c chicken fat margarine or butter
  • 2 c sweet onions sliced about 18 inch thick
  • 1 c mushrooms stems and pieces

Directions

  1. Cut the chicken livers into bite-size pieces
  2. Sprinkle with salt and pepper and allow to stand a few minutes
  3. Melt the chicken fat in a large skillet with a tight-fitting lid
  4. Add chicken livers and saute them until they begin to brown and can be cut with a fork
  5. Add the onions and mushrooms cover
  6. Cook over low heat 10 minutes
  7. Remove cover and turn up heat slightly Turn the livers and onions over with a spatula and saute 5 minutes longer or until onions turn golden brown
  8. Serve at once
  9. Serves 4
